Anyone know what the consequences are of running without the subassembly? I ripped the one off my 08 and replaced it with a 90 degree pipe fitting.

The purpose of the system is to collect gasoline vapors and burn them to reduce pollution. W/o it and since you sealed it those vapors will be returned to the fuel tank. So the consequences will be you'll have to stop fairly often to remove the extra gasoline from the now overflowing tank.

You misunderstood the situation. The subassembly is gone ( I assume it's some kind of filter?) but the fumes are still routed to the charcoal cannister as originally planned. lol...nice try though...
