thank you for the pics and research. I was curious if there was one brand that stood out in quality and performance for the 2019 Rav4 Hybrid Limited model?

I've always gone OEM for all my vehicles as the one time I didn't, the after market was covered in rust in a very short time and looked awful. It also hung lower and required some drilling to mount vs the OEM. If there was an option that was equal to or better than OEM and didn't require me to hack up a brand new vehicle, I'd consider it.

For folks who went non-OEM, what did you choose and why? Any regrets?

There is no difference between gas and HV models as far hitch mounting, they all have the same 4 mounting locations, the only difference between gas and HV is the tow rating and the location of the 12volt aux battery which is much easier to run a power wire to on the HV since it's under the cargo deck in the right rear.

As far as hitches, the Ecohitch has had great reviews here for finish and it tucks under the bumper fascia the closest, but also cost nearly double the other two, but it still far less expensive than the OEM hitches have cost for past gen Rav4s. The Curt and Draw-Tite cost about $165, but the Draw-Tite has been reported to have poor finishing with unpainted metal, could just be early production issues that may have been sorted out by now, but it's also the only hitch made in Mexico, the Ecohitch and Curt are made in the US. Use the search option to find the hitch threads, there are several with owners reporting on all three.
