In the hybrid, is it possible to fold the seats such that the cargo floor is flat?

The rear seats fold with a slight incline, if you want true flat you can remove the lower bench cushion. Not terribly hard to do, there's videos on youtube how.

Anybody removed the back bench? YouTube wasn’t clear: do the seat backs lie flat so that you could sleep back there?

My wife, me and a small dog used to sleep in the back of our 4Runner. Close quarters but mucho fun. The Rav actually looks wider between the wheel wells.

No they don't. But people have built supporting structures that rode over the folded back seats and the spare tire well and mounted blow up mattresses, etc. Use the search capability on the site and youll see some examples.
