Eco mode makes throttle modulation easy to drive the most economically in the highest gear possible or stay in EV only on an HV which increases fuel economy, I use Eco most of the time with a couple exceptions, steep mountain roads and passing on 2-lane because it's a little quicker to respond in Sport mode. When I say highest gear possible, that means 8th gear on a gas model which is 8th which is an overdrive gear, 7th is also an overdrive gear, many times it will stay in 7th at moderate speeds (40-50mph), letting up just slightly on the throttle will drop the rpm ever so slughtly when it goes into 8th, Eco mode makes that transition easier.

Extraordinary mileage in ECO mode

I decided to see what mileage this new Rav4 was capable of, highway only, varying altitudes, 80 miles out, and then back. I ran it in Eco mode. Went from 3,500ft, up to 5,000ft, then down to 2,000ft @ 55 to 70mph. I topped off the tank before and after. Previously we've only used Normal mode...
