Two weeks ago, my CEL, 4WD, and VSC lights came on. I ran a scan at AutoZone and it came back P0137 low voltage for predetermined time (Bank 1, Sensor 2) on the V6. I checked the gas cap and it was one click tight (per the cap).

I made an appointment with my mechanic which is to happen this coming Friday but tonight, the lights went off. I ran another scan and nothing. I assume the P0137 code is gone too? What happened? Could it come back? Should I still take it to the mechanic?

It is failing but has not completely failed. If you bring it to the mechanic when there is no trouble code are you going to replace the O2?

As DL175 says the dash error lights may come and go as a sensor is failing but most likely the code will stay until it's cleared. So the only harm in driving it with the dash lights on is the 4WD and VSC will be inoperative.
Actually it's kinda fun with a V6 when the 4WD light is on because you can easily spin the front tires on takeoff.
