How do most dash cams mount? With adhesive, suction cups? Basically I'm wondering if they can be mounted on the black polka dot matrix behind the rearview mirror. Thanks.
 
They can. I have a Mini 0805 (admittedly an older model), that mounts to the windshield via a 3M tape. Just be sure to degrease the mount point (rubbing alcohol) and give enough room for 1. wire routing (i.e. not bent against the headliner), and 2. clear view, not obscured by the same dots. On my Rav4 this is not on the dots, but I had it on the dots in my Mazda3.
 
Yep. Some go as suction cups, others as 3m adhesive on a foot. I can also tell you that the adhesive was removed without a trace when I was changing cars, and also that the regular double-sided molding / trim mounting tape works fine. I decided not to use suction cups due to a bad experience with Garmin suction mounts in the past (YMMV).

You might want to consider another thing. I actually got mine mounted UNDER the dots. On the mazda, I had to reposition the cam, as it was prone to overheating in the sun, and shutting down. If you think of your windshield being slanted at, say, 45deg, if you mount the cam just under the dots, you can get a sort of a sunshade from the dots, at least in mid-day sun direct from above. I know that in my case it solved the problem.
 
In my '15 RAV4, I used Scotch Locks (like velcro but made of clear plastic), purchased on ebay. I mounted on the driver's side of the rear view mirror and bought a permanent cord and routed it to the roof console for power using plastic power taps. There are plenty of videos on youtube to show you how to remove the console and where to grab switched power. The scotch locks are on the black dots with the camera exposed just below. It looks like a factory install.

Any thoughts which dash cam you are considering? I'm also in the hunt for one, preferably front and rear channels, with the parking mode.

yeah, good suggestion!
But I am kinda cheap and like to use what is supplied instead of buying or waiting for more stuff to arrive. I set a budget and stick to it. And the dash cam is permanent so won't be removed. I tend to buy better quality ones and so far have not had issues and leave it permanent in the car.
I wanted to do a universal video for all vehicles so it could help anyone not just a RAV4 owner as I am cross posting.
This way regardless what you drive you can kinda follow this guide for installing a dash cam.
 
I did this myself. It toke most of the day and gave me something to do. I made the bracket out of some aluminum and used 2 sided tape to hold the bracket. I used Velcro to hold the camera to the bracket for easy removal.:) The holder that came with the Garmin 55 sticks to the glass with a ball on the end that the camera connects to. My way is out of view of the dots.

That's a great install!
nice and neat and out of sight.
I hate those big dashcams that have huge mounting attachments.
they block the passengers view and look terrible IMO.
Yours looks great and the Garmin is a good cam.
I looked at it but considered the the JS dash and Thinkware instead as I had a price limit and everything is made in asia anyways.
Though the Thinkware FA200 was almost bought.
So far happy with the JS dash 3.0.
Image quality is pretty good or good enough and so far works reliable.
I included pics of driver and passenger view.
